The World is a Pub, Let’s Sit at the Same Table.
The World is a Pub, Let’s Sit at the Same Table.
This sentence is so characteristic of the national psychology of the Bulgarian people that we at “Pod Lipite” restaurant have decided to follow it strictly.
As people who guard and appreciate the intrinsic Bulgarian traditions and customs, we at the “Pod Lipite” restaurant try to preserve them as typical for our geographical location. One of the most typical quality of Bulgarians is that they are very hospitable. This is why we love to get together and entertain our friends around a table full of our most characteristic salads, side dishes and appetizers, but also full of typically Bulgarian drinks.
Every Bulgarian who has tried this soul-warming liquid is familiar with its effect – both relaxing and healing. This is why, in a very Bulgarian way, during the cold winter months we replace the traditional chilled rakia with the sweet spicy warmth of mulled rakia with honey and something more.
You should drink mulled rakia hot, but do not worry, because it will not burn you, as its boiling point is much lower. There is just one trick known to all Bulgarians – when you take a sip from this traditional Bulgarian elixir, you should not inhale.
So, this is one more tradition we follow at the “Pod Lipite” restaurant, and here we will share with you our recipe for traditional Bulgarian mulled rakia:
What you need is rakia, honey, one quince, and as for the side dish, you can choose one from the excellent option in our menu.
Put the honey in a tall copper coffee pot, but keep in mind that it will take a while before it caramelizes. If you do not want to wait, you should know that you would still get great taste and aroma from the honey, but those of you who are patient will also achieve amber color. After the honey caramelizes, pour in the rakia, add a piece of quince and as soon as it boils, remove it from the heat. Stir briefly this heavenly elixir and pour into warm pewter tumblers and enjoy in moderation with good side dishes. Our offer of such side dishes at “Pod Lipite” restaurant includes sliced smoked salo with leek, veal tongue in butter, homemade side dishes and sausages, and for the vegetarians we offer a selection of wild mushrooms, oven baked cheese with honey and thyme and many more…
